Pureed Broccoli Soup
This a generous soup that you can portion and freeze.
- Heat avocado oil in a large pan. Add onion until softened, 4 to 6 mn. Add garlic and parsley or coriander, cook for about 20 seconds
- Stir in broccoli and the water and broth; bring to simmer over medium high heat. Reduce heat to maintain a lively simmer and cook until very tender, about 8 to 10mn.
- Puree the soup in batches in blender until very smooth. Add salt and pepper.
- Add the chia and hemp and enjoy!
